Emma Schwarcz

It felt like a day in Austria: the air was brisk, scarves were out and we had a dog called Arnold Schwarcz with us. So it seemed right that he should point us in the direction of Hausfrau, where the air smelled of apfel strudel. The shelves were laden with sacher torte, custard slices and jars of gingerbread folk, but the time called for savoury so I went for the salmon - smoked lightly, shredded and mixed with a mild, smooth ricotta flecked with fresh dill and rolled up in crisp pastry. A sausage roll for the frauleins.
